Mezcal Joven refers to a young, unaged mezcal. The term joven means “young” in Spanish, indicating that this type of mezcal is bottled soon after distillation, without undergoing any aging in barrels. Mezcal joven showcases the raw, vibrant flavors of the agave and is typically clear or slightly cloudy in appearance.

  1. Flavor Profile: Mezcal joven is known for its bold, fresh flavors that highlight the agave’s natural sweetness and earthy, smoky notes. Since it hasn’t been aged, it retains the pure essence of the roasted agave, with flavors that can range from herbal and citrusy to earthy and slightly spicy.
  2. Production: Like all mezcals, joven mezcal is produced by roasting the agave hearts in an earthen pit, fermenting the crushed agave, and then distilling the liquid. The mezcal is bottled right after distillation, meaning it doesn’t undergo any additional aging process that would mellow or alter its flavors.
  3. Appearance: Mezcal joven is typically clear, but it can also be slightly cloudy due to the lack of filtration, which is part of its raw charm.
  4. Ideal for Cocktails or Neat: Mezcal joven is versatile, making it a favorite for sipping neat or for mixing in cocktails where the agave’s fresh and smoky notes can shine through. Many traditional mezcal enthusiasts prefer joven for its authenticity and its ability to convey the true character of the agave and the region where it was produced.

Mezcal Joven provides an unaltered glimpse into the heart of mezcal, showcasing the craftsmanship and cultural heritage of Oaxaca’s mezcal-making traditions.

This unique mezcal with added larvae was specially designed for the European palate. It has a balanced yet intense flavor. Due to the limited contact time with the mezcal worm, this variety has the slightly salty taste of the worm, but is still delicate and subtle, carrying distinct notes of smoke and fresh citrus fruits. With 42.5% alcohol content, this mezcal is mild and rounded, without losing its versatility and intensity in the mouth.

Mezcal Abocado (oder Mezcal Abocado con Gusano) refers to a mezcal that has been infused or flavored with additional ingredients after the distillation process to enhance or complement its natural flavors. The term abocado specifically means “flavored” or “seasoned.” Here are some examples of ingredients often used to make Mezcal Abocado:

  1. Gusano (Worm): Perhaps the most well-known addition, a mezcal abocado con gusano includes a worm, typically from the agave plant. This can add earthy, umami flavors, and it’s more symbolic than anything, representing the traditional Mexican heritage associated with mezcal.
  2. Fruit or Herbs: Some mezcals are infused with ingredients like orange peel, citrus zest, or local herbs to give the spirit additional layers of flavor. This can make the mezcal taste slightly sweeter or more complex.
  3. Honey: Sometimes honey or agave syrup is added to balance the smokiness and provide a touch of sweetness, creating a smoother mezcal.
  4. Peppers or Spices: Occasionally, mezcal is infused with chili peppers or other spices to add a bit of heat or spice to the profile, complementing the smoky notes.

Mezcal Abocado allows for unique variations on traditional mezcal, making it versatile for both sipping and mixing in cocktails. It’s a popular choice among people who appreciate mezcal but want to explore different flavors beyond the classic profile.
